- This is an absolutely one-of-a-kind book on the history and foods of the Spanish Hidalgos (king's children) who were sent into deep East Texas to settle it for their Spanish king. One must think about what they faced. There was no infrastructure to support them. They were unable to bring household articles. They had no homes and no furnishings. Food is one of the most important needs of any race, yet they had no fields, nor gardens and no stoves to cook in.

The history of this race of people had been lost until Dr. H. Gordon Pettey wrote a book called "The Hidalgos" of East Texas. While doing interviews to research for this book in the 1960's, he collected many original recipes from the elderly Spanish decendants at that time. Today they are all deceased and this valuable information would have been lost forever had he not recorded it. This new book called "Old, East Texas Colonial Spanish Pioneer Cookbook" not only gives recipes but tells what they had to do to survive; how they obtained and cooked their foods. One fascinating portion of the book covers earth pit cookery that they substituted for stoves. Several of these pits have been unearthed by archeologists at Nacogdoches and at the old Spanish capital of Texas at Los Adaes, now part of Louisiana. This is a large book of several hundred pages printed on big 8½ by 11 paper. Illustrated with archeological drawings of pits and kitchenware, photographs and more.
